I just (12:15am PDT) received a system message stating that there was an update available.  I have already rooted my device, and since this is my first Android device I have one simple question.  Will this update cause me any problems further down the road or should I just process the update and fly with it as is?

All it will do is diable your root, meaning you will have to re-root.

Apart from that please read this

Not sure what it did.  But I did notice that I have a lot more internal memory? Is that possible?

Yes it's possible.

2.2.1 operates under less memory.

Peace.
