I don't think you can but you can switch off the notification. Gmail -> Menu -> Notification Settings

I think no sign-out for gmail. You can try to stop sync
Setting > Accounts and Sync > Manage accounts > [you can choose to sync or not]

The following post, "Re: How to sign out my gmail?" by Tiptronic has been reported by simran on a board you moderate:

The reporter has made the following comment:
i cannot find the MENU. IS THIS ON THE PHONE OR ON PC?

I know this question was asked years ago, but I found it through a search for the same issue and hope my solution will help other ppl in future. I  came to the conclusion that its a glitch you have to deal with - you cant log out. However, the answer for me was not to put a general lock on the home screen of the phone, as its for my daughter, and I did not want her to have access to an email account just yet, so I downloaded APP LOCK (free) from the play store. It allows you to individually put a lock on whichever apps or services you wish to protect. So now she can use her phone but cannot access emails. And basically i have seen countless ppl asking how they can password protect their Gmail account on their phone. So this is one way!
