I am returning my phone (defective) and want to know how to erase all contacts,email,audio recording,photos, ect.

Do a Format of your "Internal SD card" and Hard-Reset your device.

Goto [Settings] > [SD card and phone storage], under "Internal SD card" tap on [Unmount SD card] then [Format SD card].
