How do you change language on mkv files or any other format movie files? ... Lets say, I have a mkv file and it can either be played in Russian or English....

Is there any Movie Player for Android that has such features?

doubt so, just just mkvtoolnix to remux the audio track you want, won't take long

The app is supposed to be great for what I need, but after muxing I loose the video...only sound (English, just what I want) is left.
I just un-check the box with the sound track, which I want to turn off...is there anything else I should be doing in order not to loose the video?

What I did is same as what you did, and it seem fine to me after muxing.

I just un-check the sound track box (language) that I wanted to remove, and then click on the 'start muxing' button. But could it be that you unintentionally un-check the video box as well?

Does it happen to all the movies that you're trying to muxing or does it only happen to that one particular movie?

Exactly my pattern too - unchecked only unwanted lang box. Didn't touch anything else. Seems like this simple move screws all the videos I've tried.
But, I found a roundabout way to be able to switch the audio tracks. Searching a bunch of forums found this:

Gave it a try yesterday and to my pleasant surprise, found it suggesting the lang track before opening the file. Quality is identical to default player (it will ask you if you want hardware or software decoding - that's a charm!). Some lags with the seeking bar and speaker sound is kinda low but it gives me what I need - audio track option)))

the problem lies with the newer mkvtoolnix, for each video and audio track under extra options, you must manually set compression to none otherwise galaxy s would be unable to play it

the newer rockplayer now allows choosing of audio tracks if you playback using software decode, not sure about hardware decode support for audio tracks though, I'm guessing not or mvideoplayer would have implemented it long ago

actually SGS support which type of the video (i mean the format)???

Cause I convert the video to H.256, MP4......it also unable to play???

any suggestion on the movie player, video converter (HD) and the format of the video???
